    bamboo shoot, sliced thin
  • 2
    handfuls saluyot (jute plant) leaves
  • 2tsp
    fish sauce
  • 1 1/2cups
    coconut milk
  • 2
    stalks spring onion, sliced thin
  • Salt to taste

How to make Bamboo Shoots with Coconut Milk

  1. Squeeze out the juice from the bamboo shoot.

  2. Put the bamboo shoot in a pot with enough water and boil for a few minutes until soft.

  3. Add the saluyot leaves and season with the fish sauce.

  4. Add the coconut milk and let it simmer for about 3 minutes, then remove from heat.

  5. Serve in a deep dish and garnish with spring onions.
