Jackfruit Curry (Khathal Sabzi)

Jackfruit curry is an Indian dish styled with spices and quick to cook. It is rich in Vitamin C and antioxidants which helps in boosting the immune system, good for controlling blood pressure, it helps in digestion and helps to strengthen bones.

Ingredients
- 500gJackfruit( khathal)
- 4tbspOil
- 1/2tspCumin seeds (jeera)
- 1/2tspAsafoetida (hing)
- 1tspRed chilli powder
- 1tspGinger garlic paste
- 1tbspRed Chilli Sauce (optional)
- 1tspGaram Masala
- 1tspAmchur Powder
- 2tbspCoriander Powder
- 1tspSalt
- 2Onions (Medium Size) (finely chopped)
- 2Tomatoes (Medium Size) Puree
- 3/4cupWater
How to make Jackfruit Curry (Khathal Sabzi)
Take heavy bottom pan add oil heat it and shallow fry Jackfruit( kathal) till golden brown.
Take out the fried jackfruit on paper towel.
Now in the same pan add Asafoetida, cumin seeds ,onion and saute on low to medium heat till golden brown.
Add ginger garlic paste and tomato puree, keep stirring.
After 2 minutes add turmeric, red chili powder, coriander powder, amchur, and salt.
Keep stirring every few minutes so that the curry doesn't stick to the pan. After 4-5 minutes add jackfruit (kathal) to the mixture .
Add water and put a lid and simmer on low heat for 15 minutes.
Stir the veggie after every few minutes.
After 15 minutes check if Jackfruit has softened now add garam masala powder and red chilli sauce, mix and turn off the flame.
Garnish with fresh coriander leaves.

Always prefer small Jackfruit (kathal) rather than big one as it is easy to cook and more delicious as well.
Never leave the dish while cooking unattended as it might burn.
Use olive oil as it's much healthier.
Use of red chilli sauce is optional but if added gives extra zing to the dish.
