Ingredients
- 1large eggplant (thinly sliced into 1/2in thick round shape)
- 1tbspginger garlic paste
- 1tspred chilli powder
- 1tspturmeric powder
- 1tspgaram masala powder
- 1tspcumin seeds
- 1tbspsalt
- 5tbspflour (besan/rice flour)
- 5tbspOil
How to make Baingan (Eggplant) Bhaja
Wash the eggplant and pat dry, then cut it into thick round slices.
Take a bowl, add red chilli powder, turmeric powder, garam masala, salt, cumin seeds, ginger garlic paste. Pour 1-2 tsp water to the mixture and apply on the cut slices.
Put these aside for marination for 4-5 minutes.
Take a Tawa or a pan, pour oil and let it heat up.
Now in a plate put besan and coat each slice of the eggplant separately and place it on the tawa for frying.
Keep flipping them till they turn crispy and golden in color.
Serve with either roti/sauce/dal of your own choice.
Tips & Tricks
Shallow fry the eggplant on medium heat for best results.
Once the eggplants are sliced, keep them in a bowl of water otherwise the eggplant will turn black in colour or can become sour to taste.
Eat them while hot as the taste is best then. Afterwards the crispness will subside and eggplant becomes soggy .
For more servings, quantity can be increased according to requirement, similarly all the ingredients mentioned should also be adjusted.
