Chicken Nachos

Ingredients
For the Minced Chicken
- 300gminced chicken
- 2clovegarlic, minced
- 1tsppaprika
- 1tspred chili powder
- 1/2tspchili flakes
- 1tspcumin powder
- 1/2tspblack pepper
- 1tbspoil
- 2pieceall-purpose sauce cubes
- Salt to taste
For the Guacamole
- 1pieceripe avocado
- 1piecetomato, finely chopped
- 1piecesmall onion, finely chopped
- 2tbspcilantro, finely chopped
- 1piecelime, juiced
- Salt and pepper to taste
Other Ingredients
- Corn chips
- 1/2cupchickpeas or black beans
- 1cupshredded cheese (cheddar or your favorite)
- 1piecesmall onion, finely diced
- 1piecesmall tomato, finely diced
- 2tbspcilantro, chopped
- Your favorite sauces (e.g., chipotle mayo)
- 1/2lettuce chopped
How to make Chicken Nachos
To Prepare the Minced Chicken
Heat oil in a skillet over medium heat. Add the all-purpose sauce cubes and let them dissolve. see my recipe on how to make the all purpose sauce cubes.
Stir in the paprika, cumin, red chili powder, chili flakes, black pepper, and salt. Combine well.
Add the minced garlic and cook for 1-2 minutes until fragrant.
Add the minced chicken to the skillet. Cook and stir for about 15 minutes, or until the chicken is fully cooked and flavorful. Set aside.
To Make the Guacamole
Mash the avocado in a bowl.
Mix in the lime juice, salt, and pepper.
Add the chopped onions, tomato, and cilantro, combining everything evenly.
To Assemble the Nachos
Spread the corn chips evenly on a microwave-safe plate.
Sprinkle shredded cheese over the chips and microwave for 30 seconds to 1 minute, or until the cheese is melted.
Layer chickpeas or black beans over the melted cheese.
Add the prepared minced chicken on top.
Sprinkle diced onion, tomato, lettuce and cilantro for freshness.
Top each serving with a generous scoop of guacamole.
Drizzle with your favorite sauces, like chipotle mayo, for an extra kick.
Tips & Tricks
For extra flavor, you can add a squeeze of lime juice over the assembled nachos.
If you prefer spicier nachos, increase the amount of chili powder or add jalapeños.
You can replace the chickpeas with black beans.
