- 1medium cauliflower
- 1broccoli head
- 3to 4 eggs
- 2medium carrots
- 1bunch ofspring onions
- 1/2cupgreen peas
- 2tspsoy sauce
- 1tspSriracha
- 1tbspoil
How to make Cauliflower Broccoli Fried 'Rice' (Keto-Friendly Recipe)
Prep the Cauliflower and Broccoli Rice
Blanch the cauliflower and broccoli (optional) florets in boiling water for 30-60 seconds. Immediately transfer them to an ice bath to stop cooking.
Pat dry, then pulse in a food processor until coarse and rice-like. Set aside.
Prep the Vegetables
Finely chop the carrots and the white parts of the spring onions. Keep the green parts for garnish.
Cook the 'Rice'
Heat oil in a skillet or wok over medium-high heat.
Add the chopped spring onion whites and carrots. Sauté for 2-3 minutes until softened. Add the green peas if using.
Scramble the Eggs
Push the veggies to one side of the skillet and pour in the beaten eggs. Scramble until just set, then mix with the veggies.
Add Cauliflower and Broccoli Rice
Stir in the cauliflower and broccoli rice. Toss well to combine with the veggies and eggs.
Season and Stir-Fry
Add soy sauce, Sriracha, salt, and pepper. Stir-fry everything on high heat for another 2-3 minutes until the 'rice' is heated through but not mushy. Adjust seasoning to taste.
Garnish and Serve
Sprinkle with the reserved green parts of the spring onions. Serve hot.
Tips & Tricks
For added protein, you can toss in cooked chicken, shrimp, or tofu.
