A soft and moist eggless coconut loaf cake perfect for a sweet treat.
Ingredients
- 1/2cupcurd
- 1/2cupoil
- 1/2cupsugar
- 1tspvanilla essence
- 1 1/2cupall-purpose flour
- 1tspbaking powder
- 1/2tspbaking soda
- 1pinchsalt
- 1/4cupdesiccated coconut
- 3/4cupmilk
How to make Eggless Coconut Loaf Cake
In a mixing bowl, add curd, oil, sugar, and vanilla essence. Whisk until smooth and creamy.
Place a sieve over the bowl and add all-purpose flour, baking powder, baking soda, and salt. Sift well and discard any lumps.
Add desiccated coconut and milk to the mixture. Mix using the cut and fold method, being careful not to overmix.
Prepare a loaf pan with parchment paper. Pour the batter into the pan and smooth the top.
Make toothpick marks on the surface and tap the pan twice to remove air bubbles.
Bake in a preheated oven at 350°F for 40 minutes.
Remove from the oven and let it cool down. Then remove the parchment paper.
Slice the cake and enjoy.

Ensure all ingredients are at room temperature for better mixing.
Do not overmix the batter to keep the cake soft and moist.
