Ingredients
- 2pieceripe tomatoes, diced
- 1tbspfresh basil leaves, chopped
- 2clovegarlic, minced
- 1tbspextra virgin olive oil
- 1tbspchopped coriander
- 1tspParmesan cheese (or any other as per choice)
- Salt and black pepper, to taste
- 3piecesourdough bread
- Olive oil
- 1tsplemon juice
How to make Tomato Basil Bruschetta
Prepare the Tomato Mixture
In a bowl, combine the diced tomatoes, chopped basil, minced garlic, olive oil, lemon juice, and coriander.
Season with salt and pepper to taste. Mix well and let it sit for at least 5 minutes to allow the flavors to meld.
Prepare the Bread
Preheat your oven to 200°C.
Place the sourdough bread on a baking sheet. Brush each slice lightly with olive oil on one side.
Toast the Bread
Toast the bread slices in the preheated oven for about 5-6 minutes, or until they are golden brown and crispy on the edges.
Assemble the Bruschetta
Once the bread slices are toasted, spoon the tomato mixture generously onto each slice.
Sprinkle some parmesan cheese and olive oil on the top, before serving.
Arrange the bruschetta on a serving platter and serve immediately.
