How to make Delicious ukwa(breadfruit)

Cooking time please

  1. put your breadfruits in a bowl and wash properly. using your hands scoop the breadfruit into your cooking pot gently until you get to the bottom.Once you get to the bottom carefully scoop as much as you can without getting the sands; adding and draining water as needed. Put your pot on fire add enough water to cover the breadfruit, close your pot and leave to cook.

  2. Ingredients; 12 cups of breadfruits, 2 medium onions, 8 red bell peppers, 1 medium sized green pepper, crayfish, smoked catfish,two tablespoons of powdered curry, 1 tablespoon fresh ginger, 3 knorcubes , half teaspoon of salt, red oil, bitterleaf.

Prep time

  1. While your breadfruit boils, prep your ingredients.cut your onions, wash your peppers and crayfish and grind.put your bitterleaf in a bowl,add water and mash properly to remove the bitter taste then drain the water (be sure to squeeze the bitterleaf properly to remove all bitter water.

  2. Once your done prepping, check your breadfruit using a spoon scope little of and check if it's tender. If it's not tender yet cover and allow to cook until tender adding water if needed. If it's already tender, make sure that the water is now at the same level as the breadfruit(if there's excess water please drain and if there's not enough add water) then add your onions,grinded pepper and crayfish, washed fish and bitterleaf and cover to cook.

  3. After 10 to 15 mins add your red oil, Maggi seasonings, curry and ground ginger. Let it cook for 5 to 10 mins. Turn properly to mix everything together, turn off the heat and enjoy your delicious ukwa. You pair this with fried chicken,fish or plantains.

Tips & Tricks

  1. Add little oil because breadfruit doesn't need too much oil. you can add the oil little by little, once your food gets a light yellow colour, stop. Mash your bitterleaf and squeeze properly to remove the bitter taste. You can also boil the bitterleaf for 15 to 20 minutes then drain and squeeze out the water to also remove the bitter taste.
