Homemade Lemon Curd recipe

Ingredients

8 Servings
(1 serving = 1 tablespoon)
  • 1cup
    granulated sugar
  • 2
    large eggs, at room temperature
  • 1/2tsp
    kosher salt
  • 2/3cup
    fresh lemon juice, from 4 to 5 lemons
  • 8tbsp
    room temperature unsalted butter, cubed, divided

How to make Homemade Lemon Curd

  1. Whisk together sugar, eggs, salt, and lemon juice in a microwave-safe bowl.

  2. Add 4 tablespoons of butter.

  3. Microwave the mixture in 1-minute intervals, stirring after each, until the curd thickens enough to coat the back of a spoon. This will take between 4 and 6 minutes.

  4. Remove from microwave and add the remaining 4 tablespoons of butter, stirring to combine.

  5. Strain if lumps occur, then store uncovered in the fridge until cool. If not using right away, keep covered in the fridge.

Tips & Tricks

  1. For a smoother texture, strain the lemon curd before storing.

  2. Use the freshest lemons for the best flavor.
