Sizzling Steak and Summer Vegetables
This dish is packed with flavor and easy to make. The steak is cooked to perfection and the vegetables are roasted until they are tender-crisp. This is a great dish for a weeknight meal or a special occasion.
Ingredients
- 1lbribeye steak
- 1tbspolive oil
- 1tspkosher salt
- 1/2tspblack pepper
- 1piecered onion, sliced
- 1piecegreen bell pepper, sliced
- 1piecezucchini, sliced
- 1pieceyellow squash, sliced
- 1tbspchopped fresh rosemary
- 1/4cupred wine vinegar
How to make Sizzling Steak and Summer Vegetables
Preheat oven to 400 degrees F (200 degrees C).
Pat the steak dry with paper towels. Season with olive oil, salt, and pepper.
Heat a large cast-iron skillet over medium-high heat. Sear the steak for 3-4 minutes per side, or until desired doneness is reached.
Remove the steak from the skillet and tent with foil to let it rest.
Add the onion, bell pepper, zucchini, and yellow squash to the skillet. Sauté for 5-7 minutes, or until the vegetables are tender-crisp.
Stir in the rosemary and red wine vinegar. Cook for an additional minute, or until the vinegar is reduced by half.
Slice the steak against the grain and serve with the vegetables.
Tips & Tricks
For a more flavorful steak, marinate it in the olive oil, salt, and pepper for at least 30 minutes before cooking.
If you don't have a cast-iron skillet, you can use a large oven-safe skillet.
Be sure to not overcrowd the skillet when searing the steak. This will help to ensure that the steak cooks evenly.
You can use any type of vegetable that you like in this dish. Some other good options include broccoli, asparagus, or mushrooms.
For a more decadent dish, you can serve the steak and vegetables with a red wine sauce.
