Ingredients

Mutton 2 lb

  • 2lb
    mutton
  • 1tsp
    salt
  • 2tbsp
    lemon juice

For Paste

  • 1cup
    curd
  • 1tbsp
    ginger paste
  • 1tbsp
    garlic paste
  • 1tsp
    turmeric powder
  • 2tbsp
    red chili powder
  • 1tsp
    coriander powder
  • 1tsp
    cumin powder

For Tempering

  • 3tbsp
    ghee
  • 4piece
    cloves
  • 2piece
    cinnamon sticks
  • 4piece
    cardamom pods
  • 1tsp
    cumin seeds

For Cooking

  • 2cup
    water
  • 1tsp
    salt

How to make Rogan Josh

Marination

  1. Take mutton in a bowl. Add salt and lemon juice. Mix well and leave it to marinate overnight or for 2 hours.

Preparation of Paste

  1. Take curd in a bowl and whisk till it is smooth. Add all the ingredients given for the paste. Mix well and set aside.

Cooking

  1. Heat ghee in a pot. Add all the tempering ingredients and sauté for a minute.

  2. Add mutton a few pieces at a time and brown the meat. This will take around 2 to 3 minutes per batch. As the mutton browns, remove it to a plate and continue with the next batch.

  3. When browning the last batch, add all the browned mutton back into the pot and let it heat through.

  4. Add the curd mixture and mix well. Let this cook and brown for 10 minutes.

  5. Add water and mix well. Add more salt if needed. Bring everything to a boil, cover the pot, and simmer for 2 hours.

  6. Once cooked and the meat falls off the bone, turn off the heat and serve with rice or roti.
