  1. Mix all ingredients in a large bowl until a shaggy dough forms.

  2. Rest for 15 minutes to allow for autolyse.

  3. Knead on a floured surface for 8 to 10 minutes until smooth and elastic, or use a stand mixer with a dough hook for 5 to 8 minutes.

  4. Place the dough in a lightly oiled bowl, cover, and let it rest for 1 hour for bulk fermentation.

  5. Perform one set of stretch and folds, then cover again and let rise for 2 hours, or until doubled in size.

Shaping and Boiling Preparation

  1. Divide and roll the dough into ping-pong-sized balls, placing them on a parchment-lined baking sheet.

  2. Cover and let rest for 1 hour at room temperature, or refrigerate overnight and skip the next freezing step.

  3. If not refrigerated, freeze the bites for 30 minutes to help them hold shape during boiling.

Boiling and Baking

  1. Preheat the oven to 375°F (190°C).

  2. In a pot, bring water to a boil and add 2 tablespoons of baking soda.

  3. Drop in a few pretzel bites at a time. Once they float (about 30 seconds), remove them and return to the baking sheet.
