How to make Simple Biscuit Pudding

Prepare the Biscuit Base

  1. Crush the biscuits into fine crumbs using a food processor or by placing them in a ziplock bag and crushing them with a rolling pin.

  2. In a bowl, mix the crushed biscuits with melted butter and sugar until well combined.

  3. Press the mixture into the bottom of a rectangular or square dish to form an even layer. Refrigerate while you prepare the pudding.

Make the Pudding

  1. In a saucepan, combine milk, heavy cream, sugar, cornstarch, vanilla extract, and salt. Mix well to avoid lumps.

  2. Heat the mixture over medium heat, stirring constantly until it thickens, about 5-7 minutes. Once thickened, remove from heat.

Assemble the Pudding

  1. Pour half of the pudding mixture over the biscuit base and spread evenly.

  2. Add another layer of crushed biscuits on top of the pudding.

  3. Pour the remaining pudding over the biscuits, smoothing it out with a spatula.

Chill

  1. Cover the dish with plastic wrap or aluminum foil and refrigerate for at least 4 hours, or overnight if possible.

Serve

  1. Once chilled, cut into squares or rectangles and serve. You can top it with whipped cream, chocolate sauce, or fruit, if desired.

Tips & Tricks

  1. Feel free to add layers of chocolate or fruit like bananas or berries between the pudding and biscuit layers for extra flavor.

  2. Store leftovers in the refrigerator for up to 3 days.
