"Vrat ki Idli" is a delicious and healthy alternative to the regular rice-based idli, specially prepared during fasting (vrat) in festivals like Navratri. These idlis are made with ingredients that are allowed during fasts, such as sama ke chawal (barnyard millet) and sabudana ( tapioca pearls).

- 1/2cupSabudana flour ( tapioca pearls flour )
- 1/2cupCurd
- 1/2cupWater
- pinchof senda namak/ rock salt
- 1tspFruit salt

How to make Upwas ki Idli recipe
Preparing Batter for Upwas ki Idli
In a bowl , add sama rice and sabudana flour with curd and water . Mix well. Soak the batter for 30 min. Adjust water if consistency turns dry. The batter should be thick and not watery.
After 25 min, keep idli steamer to heat on stove , check the batter , if it is dry add 1 tbsp of water more if required, mix well. Add pinch of senda namak/ rock salt and 1 tsp of fruit salt . Mix for few seconds. Grease the idli mould and add the batter one by one.
Steam the upwas ki idlis for 15-18 min. Remove from the steamer and rest for few minutes.
Demould the idlis and serve hot with upwas ki chutney.
Tips & Tricks
Use thick yogurt for a better binding effect, making the idlis soft and gives them a slight fermentation effect, which improves texture and taste.
Let the batter rest for at least 15-20 minutes after mixing so that the ingredients absorb moisture properly, resulting in softer idlis.
Adding a pinch of baking soda or fruit salt (Eno) just before steaming ensures fluffy idlis, since the traditional fermentation process isn’t used in upwas recipes
Ensure that you lightly grease the idli moulds with ghee or oil to prevent sticking, especially if using millet or sabudana, which can stick more than rice-based batters.
