How to make Sweet Vermicelli ( Mithi Sevaiyan )
Heat ghee in a pan over medium heat. Add cashewnuts and roast for few seconds. Then add vermicelli and roast it until it turns golden brown. Saute continuously to avoid burning.
Once vermicelli is roasted well , add raisins, sugar and crushed cardamom. Allow the mixture to cook for a few more minutes.
Add boiled milk , stir and cover. Simmer for 2-3 minutes .
Once everything is well combined and the consistency is to your liking, remove from heat. Let it rest for sometime.
Serve hot or cold . Garnish with chopped pistachios.
Tips & Tricks
Ensure that vermicelli turns golden brown but avoid over-roasting, as it can burn quickly. Stir continuously to achieve an even color.
You can also use jaggery or condensed milk instead of sugar for a deeper, more caramel-like sweetness.
Freshly ground cardamom enhances the fragrance of the dish. Crush the seeds right before adding them for the best flavor.
You can add Rose water while cooking vermicelli right after adding milk . It adds a subtle floral note, but use it sparingly so it doesn’t overpower the dish.
Cook vermicelli just until it softens and absorbs the liquid. Overcooking can make it mushy, while undercooking leaves it chewy.
