  • 350g
    Green capsicum

    roasted peanut powder
  • pinch
    of sugar
  • Chopped coriander leaves

How to make Stuffed Capsicum Curry

  1. Wash green capsicum really well and then cut the cap as shown below, deseed the capsicums and wash again to remove seeds completely.

  2. Fos stuffing, heat oil , splutter some mustard seeds, fennel seeds , cumin seeds and then toss finely chopped onion & capsicum.

  3. Add all the masalas mentioned in the ingredients section and cook til oil separates. Then add pinch of sugar,peanut powder and coriander leaves. Mix well and stuffing is ready. Allow it to cool down.

  4. Put the stuffing in the capsicum , dip in the besan batter and deep fry the capsicum. Keep it aside. Stuffed Capsicum is ready. Let's make curry.

Gravy for Stuffed Green Capsicum Curry

  1. Heat oil , toss finely chopped onion-tomato till it completely turns mushy , then add simple basic spices mentioned above till oil separates.

  2. Add water , simmer then add roasted peanut powder. Alloow it to boil .

  3. Once the gravy boils switch off the flame. While serving put gravy first then keep the stuffed Capsicum over it. Stuffed Green Capsicum Curry is ready to serve.

Tips & Tricks

  1. While green capsicum is commonly used, you can mix red, yellow, and orange for a vibrant look and slight sweetness.

  2. Use paneer, tofu, or minced soya granules for a protein-packed option in stuffing.

  3. You can also experiment with fennel powder or kasuri methi (dried fenugreek leaves) for a unique touch.
