Ingredients

  • 1L
    full cream milk
  • 1cup
    sugar
  • 2tbsp
    soaked Sabudana
  • Few pods of green cardamom
  • Mix dryfruits of your choice
  • 1cup
    Vermicelli ( sevaiyan)
  • Few strands of saffron
  • 1/2cup
    water
  • Some pistachio flakes to garnish

How to make Sevaiyan Doodh Pak | Vermicelli Pudding

  1. Heat 1 tbsp ghee and roast dryfruits of your choice. Keep the roasted dryfruits in a small plate aside.

  2. Again heat 1 tbsp ghee and roast vermicelli till it turns brown in colour. Keep it separately in a plate.

  3. Heat 1 tbsp ghee in the same pan and add cloves with soaked Sabudana , few saffron strands, 1/2 cup water & roasted vermicelli. Simmer for 5-7 min.

  4. Once vermicelli cooks , add full cream milk and crushed cardamom pods. Allow the milk to boil. This will take around 10 min.

  5. Add sugar as per taste ( I added 1 cup sugar for 1 litre milk ) with roasted dryfruits.

  6. Let the pudding simmer for another 5 min.. Switch off the flame. Allow it to rest for few minutes , this will thicken the pudding. Doodh Pak is ready to serve !!! You can serve warm or cold as per your preferences. Garnish some pistachio flakes.

  1. Doodh Pak tastes awesome when served chilled.

  2. Use full cream milk for best results.

  3. To thicken pudding/ kheer , I used sabudana , you can use rice or poha ( flattened rice).

  4. Clove gives a spice punch to the pudding. Do add.
