Ingredients

3 Servings
(1 serving = 250 ml glass)

Preparation for Rajgirache Ambil

  • 3/4cup
    Curd
  • 2cup
    Water
  • 1tsp
    sugar
  • pinch
    of salt
  • 1/4cup
    Rajgira flour ( amaranth flour )

Tempering Rajgirache Ambil

  • 1/2tbsp
    Ghee/ peanut oil
  • 1tsp
    Cumin seeds
  • 1
    Green chillies
  • 1tsp
    Chopped ginger
  • Coriander leaves to garnish

How to make Rajgira Ambil Recipe (Amaranth Buttermilk)

Preparing Rajgirache Ambil

  1. In a vessel , add 3/4 cup curd with 2 cups of water. Add pinch of salt and 1 tsp sugar.

  2. Next add rajgira flour ( amaranth flour ). Whisk altogether.

  3. Heat this mixture on low flame for 4-5 min. Stir continuously to avoid curdling of curd. In next 5 min the mixture thickens. Switch off the flame.

Tempering Rajgirache Ambil

  1. In a tadka pan , heat 1/2tbsp peanut oil or ghee, next add cumin seeds, green chillies and chopped ginger. Pour the tadka on the above mixture and mix well.

  2. Garnish with coriander leaves and serve warm.

Tips & Tricks

  1. Adjust the water based on how thick or thin you prefer your ambil. If you want a thinner, drinkable version, add more water.

  2. Stir buttermilk continuously for 5 min on low flame to avoid curdling.

  3. Ambil can be stored in the fridge for up to 2-3 days. If it thickens too much after cooling, dilute with some water and reheat.

  4. Ambil can be served as a refreshing summer drink or a light meal. It's often enjoyed with bhakri (flatbread) or consumed on its own.
