Nivagrya is a traditional Maharashtrian snack that makes great use of the leftover rice flour dough used to make Modak during Ganesh Chaturthi. It is steamed, hence healthy for everyone accompanied with sweet ukadiche modak. This can be served any time of the day as maincourse or side dish too

Ingredients
To make Nivagyra recipe
- Leftover Modak rice dough
- 1green chilli
- 1tspcumin seeds
- Few coriander leaves
- Enough Water to steam
How to make Nivagyra recipe using Leftover Modak rice dough.
Masala mix for Nivagyra
In a chutney grinder jar , add green chillies, cumin seeds and coriander leaves. Grind coursely without adding water.
Add this masala to the leftover Modak rice dough . Knead well.
Shaping Nivagyra
Now make small balls and flattened using palm and fingers with a thickness of 1/2cm. Place on a banana leaf to enhance taste . Meanwhile heat vessel for steaming nivagyra.
Place on steamer and steam for 15-20 min.
Serve hot with chutney/ sauce/ any veg. Curry
Tips & Tricks
If the dough is hard, sprinkle some drops of water to soften
You can add chilli flakes , oregano for kids to give it an Italian touch
After steaming allow Nivagyra to settle for few minutes then serve with your favourite chutney or sweet ukadiche modak
