Ingredients
Carrot Bean Poriyal
- 1medium size orange carrot
- 250gfrench beans
- 1tspCoconut oil
- 1tspMustard seeds
- 1tspUrad dal
- 1dry red chilli
- 1/3cupwater
- Few curry leaves
- pinchof asafoetida
For Coconut Masala
- 1/4cupGrated coconut/ coconut cubes
- 1tspCumin seeds
- 2Green chillies
- Salt to taste
- 1tspTurmeric powder
How to make Carrot Bean Poriyal - Onam Sadya Recipe
Coconut Dry Paste
Wash & Chop finely carrot & french beans . Heat coconut oil & crackle urad dal , mustard seeds, curry leaves & dry Red chilli.
Once they crackle and turn brownish in colour , add pinch of asafoetida with the chopped veggies. Add 1/3rd cup water . Cover & simmer for 5-7 min.
Till beans carrot cook, let's make coconut dry paste. In a chutney grinder jar, add coconut, green chillies, cumin seeds, turmeric powder & salt to taste. Grind without adding water .
Check on the veggies and add the coconut paste . Mix and simmer for 2 min. Switch off the flame. Let it rest for few minutes.
Tips & Tricks
Use coconut oil for tempering & fresh coconut for authentic taste.
Don't overcook the veggies, it should be slightly crunchy.
