Honey candy or thaen mittai is a childhood favorite for many South Indians. When bitten into, the syrup (thaen) oozes out, making it more enjoyable.

Ingredients
Candy Batter
- 1cupIdli rice
- 1/4cupUrad dal
- 1/4tspBaking powder
- 1/4tspOrange food color
- 1pinchSalt
Sugar Syrup
- 1 1/2cupSugar
- 1cupWater
- 1tbspLemon juice
How to make Thaen Mittai / Honey Candy
Prepare Batter
Wash the rice and urad dal. Soak them separately for 3 hours.
Drain the soaked rice and urad dal.
Grind the soaked urad dal to a smooth thick paste, adding a little water at a time.
Grind the soaked rice in the same manner.
Mix the two batters together with food color and salt.
Make Sugar Syrup
Boil sugar and water in a pan until the sugar completely melts and becomes a little thick and syrupy.
Add lemon juice to the syrup and keep it on a very low flame.
Fry and Soak Candy
Heat oil in a pan for deep frying.
Wet your hands with some water and take a small portion of the batter.
Drop the batter into the hot oil and fry until the outer layer becomes crispy.
Remove from the oil and drop into the warm sugar syrup.
Let it soak for 5 minutes, then remove from the syrup.
Tips & Tricks
Ensure the batter is thick to maintain the shape of the candy while frying.
Do not add too much water while grinding the batter.
