Prawns roasted in a spicy masala flavored with ghee. Excellent side dish for rice. This recipe is made without onion and tomato. It tastes really delicious and quite spicy.

Ingredients

4 Servings
(1 serving = 125g)

Main Ingredients

  • 500g
    Prawns
  • 5tbsp
    Ghee

For Roasting Spices

  • 2tbsp
    Coriander seeds
  • 1/2tsp
    Cumin seeds
  • 1tsp
    Fennel seeds
  • 1 1/2tsp
    Black peppercorns
  • 1/4tsp
    Fenugreek seeds

For Masala Paste

  • 10piece
    Kashmiri red chillies
  • 1/4tsp
    Jaggery
  • 1tbsp
    Tamarind paste
  • 8clove
    Garlic
  • 3tbsp
    Coconut milk
  • Salt to taste

How to make Prawns Ghee Roast

Preparation

  1. Add de-veined prawns into a bowl, add salt, turmeric, and 0.5 tsp of chili powder.

  2. Set a pan on low flame and heat it well, then add 2 tbsp of ghee.

  3. Let it heat nicely, then add marinated prawns into the pan.

  4. Cook the prawns nicely from both sides. Make sure not to overcook the prawns or they will turn chewy.

  5. When cooked well, keep aside.

Making Ghee Roast Masala

  1. Set a pan on high flame, once the pan is heated lower the flame.

  2. Add coriander seeds along with the remaining spices for roasting.

  3. Dry roast them well on low flame until fragrant.

  4. Remove from the flame and after cooling down, powder it using a mixer grinder.

  5. Soak the red chillies in hot water for 10 minutes.

  6. Grind it to a fine paste along with powdered spices, jaggery, tamarind, garlic, and salt using coconut milk.

  7. Grind this to a thick paste.

  8. Heat a pan, add 3 tbsp of ghee. Let it heat nicely.

  9. Add the ground masala paste to it.

  10. Cook on medium flame until it darkens and gets crumbly.

  11. When the masala paste is cooked, add 2 tbsp of hot water to correct the consistency.

  12. Add the cooked prawns into the masala and stir well.

  13. Cook on high flame for 2 minutes.

  14. Prawns ghee roast is ready to serve.
