Potato Bonda is a delicious and filling snack made with spiced mashed potato balls dipped in gram flour batter and deep-fried to perfection. This vegan-friendly dish pairs well with mint chutney, coconut chutney, or tomato sauce.

Ingredients

4 Servings
(1 serving = 2-3 bondas)

For the Potato Filling

  • 2piece
    Potato
  • 1piece
    Onion
  • 1tbsp
    Grated carrot
  • 2piece
    Green chilli
  • 1tsp
    Chopped ginger
  • 1/2tsp
    Fennel seeds
  • 1/4tsp
    Turmeric powder
  • 1tbsp
    Coriander leaves
  • 1sprig
    Curry leaves
  • Salt to taste
  • Oil for frying

For the Batter

  • 3tbsp
    Gram flour
  • 3/4tbsp
    Fine rice flour
  • 1/2tsp
    Chilli powder
  • 1pinch
    Asafoetida
  • Salt to taste

How to make Potato Bonda / Masala Bonda

Prepare the Potato Filling

  1. Cook the potatoes and mash them. Set aside.

  2. Heat a pan and add oil, then add fennel seeds.

  3. Add ginger and green chilli, sauté for a few seconds.

  4. Add chopped onion and sauté until it becomes transparent.

  5. Add curry leaves, turmeric powder, and salt along with 1/4 cup hot water.

  6. Let it boil until the water is completely reduced.

  7. Add mashed potato and grated carrot. Mix well for 1 minute.

  8. Add coriander leaves and turn off the flame. Set aside.

Prepare the Batter

  1. In a bowl, add gram flour, rice flour, and all other ingredients for the batter.

  2. Make a ribbon consistency batter by adding enough water.

Form and Fry the Bondas

  1. Make medium sized balls out of the potato mix.

  2. Dip each ball in the gram flour batter.

  3. Deep fry until light brown in color.

Tips & Tricks

  1. Ensure the oil is hot enough before frying to get a crispy texture.

  2. Serve hot with mint chutney, coconut chutney, or tomato sauce for the best taste.
