A traditional mushroom masala recipe passed down from my mother's grandma, featuring green brinjal for an authentic taste. Best enjoyed with boiled rice and curd or chapati.

Mushroom Masala recipe

Ingredients

(1 serving = 1 portion)

Main Ingredients

  • 250g
    mushroom
  • 20piece
    shallots
  • 4piece
    green brinjal
  • 1tsp
    pepper powder
  • 1tbsp
    coriander powder
  • 1tbsp
    chilly powder
  • 1/4tsp
    fenugreek seeds
  • 1/4tsp
    turmeric powder
  • 1sprig
    curry leaves
  • 5tbsp
    coconut oil
  • salt to taste

How to make Mushroom Masala

Preparation

  1. Wash the brinjal and cut into medium pieces.

Cooking

  1. To the cleaned mushrooms, add turmeric powder, chilly powder, pepper powder, and salt.

  2. Heat oil in a kadai and add fenugreek seeds.

  3. Add chopped shallots and sauté until they turn golden brown.

  4. Add the marinated mushrooms and sauté for 5 minutes on medium flame.

  5. Add 1/2 cup water and bring to a boil, then add brinjal pieces. Cook until completely done.

  6. Once cooked, sprinkle fresh curry leaves and coconut oil. Close the lid and switch off the flame.

Tips & Tricks

  1. Using an earthen pot can enhance the taste of the dish.

  2. If green brinjal is unavailable, purple brinjal can be used as a substitute.
