- 5tbspcoconut oil

How to make Mushroom Masala
Preparation
Wash the brinjal and cut into medium pieces.
Cooking
To the cleaned mushrooms, add turmeric powder, chilly powder, pepper powder, and salt.
Heat oil in a kadai and add fenugreek seeds.
Add chopped shallots and sauté until they turn golden brown.
Add the marinated mushrooms and sauté for 5 minutes on medium flame.
Add 1/2 cup water and bring to a boil, then add brinjal pieces. Cook until completely done.
Once cooked, sprinkle fresh curry leaves and coconut oil. Close the lid and switch off the flame.

Using an earthen pot can enhance the taste of the dish.
If green brinjal is unavailable, purple brinjal can be used as a substitute.
