Ladies Finger Stir Fry (Vendakka Varuthathu)
A traditional South Indian stir fry made with ladies finger (okra), shallots, and spices. This recipe is a family favorite, known for its simplicity and delicious taste. Best served with boiled rice.

- 250gladies finger (okra)
- 15pieceshallots
- 1handful grated coconut
- 2tspchilly powder
- 1/4tspturmeric powder
- salt to taste
- 3tbspoil
- 1/2tspmustard seeds
How to make Ladies Finger Stir Fry (Vendakka Varuthathu)
Preparation
Wash and wipe out the extra water from the ladies finger.
Chop the ladies finger into small pieces.
Cooking
Put a pan on the stove and add oil. When it becomes hot, add mustard seeds.
When the mustard seeds pop, add chopped ladies finger.
Sauté for 5 minutes on high flame.
Add shallot pieces and sauté for 2 minutes on high flame.
Add chilly powder, turmeric powder, salt, and grated coconut.
Sauté until it becomes completely fried.
Tips & Tricks
Use fresh ladies finger for the best taste.
Cook on medium to high flame to avoid the dish becoming mushy.
Wipe out extra water before chopping the ladies finger.
