Kerala Style Vegetable Stew
A staple dish from Kerala, this vegetable stew is nutritious and mildly spiced with pepper and green chilies, enhanced with curry leaves and coconut milk.

- 1tspGinger
- 3pieceGreen chilly
- 1sprigCurry leaves
- 1tbspCoconut oil
- 1cup2nd coconut milk
- 3/4cupThick coconut milk
- Salt to taste
How to make Kerala Style Vegetable Stew
Wash and chop the potatoes into medium-sized pieces.
In a pressure cooker, add potatoes with water and salt. Cook until 1 whistle.
In a kadai, add onion, green chilies, ginger, carrot pieces, and 1/4 cup water. Boil for 2 minutes.
Add boiled potatoes and 2nd coconut milk. Allow to boil until it thickens.
Add thick coconut milk. Stir continuously on medium flame until it starts bubbling.
Garnish with fresh curry leaves, coconut oil, and pepper powder. Close the kadai for 5 minutes.
Serve the vegetable stew with hot palappam, idly, or dosa.
Tips & Tricks
For a non-vegetarian version, you can add meat like mutton, chicken, or beef.
