How to make Jackfruit / chakka Varattiyathu
Preparation Steps
Cut the deseeded jackfruit into small pieces.
Steam the jackfruit in a steamer until it is cooked well.
Boil the jaggery along with half a cup of water until the jaggery completely melts.
Turn off the flame and strain the mixture to remove impurities from the jaggery. The jaggery syrup is ready; keep it aside.
Put a wide, thick-bottomed pan on the flame.
Add the cooked jackfruit to the pan.
Stir continuously over medium heat until the water content in the cooked jackfruit is completely evaporated.
At this point, add the jaggery syrup and one tablespoon of ghee.
Continue stirring to prevent sticking to the pan.
Stir until the jackfruit mixture becomes thick and non-sticky, adding more ghee as needed.
Finally, add a little ghee and remove from the flame.
Let it cool down completely.
Take a glass jar, pour two tablespoons of sugar at the bottom, and then transfer the jackfruit Varattiyathu to the jar. This will help extend its shelf life.
