Making the bubbles
Boil water with jaggery powder until it completely melts.
Add tapioca powder and mix well without any lumps.
Turn off the flame and add grated dark compound and the remaining tapioca powder.
Mix well to form a soft dough.
Make small balls from the dough, dusting with tapioca powder to prevent sticking.
Boil water and add the tapioca balls, stirring slowly.
Cook for 15 minutes, then strain.
Boil water with jaggery powder until it melts, then add the drained tapioca balls and cook for 5 minutes. Set aside.
Making the Payasam
Boil jaggery with water until it completely melts, then strain to remove impurities.
Heat ghee in a thick-bottomed pan and add the prepared bubbles, mixing well for 2 minutes.
Add the jaggery syrup and allow to boil for 5 minutes.
Add second coconut milk and boil for another 5 minutes, stirring occasionally.
Add condensed milk and thick coconut milk, stirring continuously for 30 seconds on low flame without allowing it to boil.
Turn off the flame and add ghee and cardamom powder, mixing well.
Serve the tasty bubble Payasam.
