Floating island pudding is a dessert featuring floating meringue in creamy vanilla custard.

Ingredients
Custard
- 1pieceegg yolk
- 6tbspsugar
- 2tbspfresh cream
- 1tbspcustard powder
- 1pinchsalt
- 2cupsmilk
Meringue
- 1pieceegg white
- 2tbsppowdered sugar
- 1/2tspvanilla essence
Garnishing
- 1pinchcrushed nuts
How to make Floating Island Pudding
Prepare Custard
In a bowl, mix egg yolk, sugar, fresh cream, custard powder, salt, and milk.
Prepare Meringue
In another bowl, beat egg white, powdered sugar, and vanilla essence until stiff peaks form.
Cook Custard and Meringue
Pour the custard mixture into a wide pan and boil until it reaches a slightly thick, pouring consistency.
Using a spoon, gently place scoops of meringue onto the custard.
Poach one side of the meringue, then gently flip and poach the other side for 2 minutes.
Serve
Transfer the pudding to a serving bowl and garnish with crushed nuts.
Allow it to cool, then refrigerate for 2 hours before serving.
Tips & Tricks
Do not overcrowd the pan with meringue to ensure even poaching.
