Ingredients

Custard

  • 1piece
    egg yolk
  • 6tbsp
    sugar
  • 2tbsp
    fresh cream
  • 1tbsp
    custard powder
  • 1pinch
    salt
  • 2cups
    milk

Meringue

  • 1piece
    egg white
  • 2tbsp
    powdered sugar
  • 1/2tsp
    vanilla essence

Garnishing

  • 1pinch
    crushed nuts

How to make Floating Island Pudding

Prepare Custard

  1. In a bowl, mix egg yolk, sugar, fresh cream, custard powder, salt, and milk.

Prepare Meringue

  1. In another bowl, beat egg white, powdered sugar, and vanilla essence until stiff peaks form.

Cook Custard and Meringue

  1. Pour the custard mixture into a wide pan and boil until it reaches a slightly thick, pouring consistency.

  2. Using a spoon, gently place scoops of meringue onto the custard.

  3. Poach one side of the meringue, then gently flip and poach the other side for 2 minutes.

Serve

  1. Transfer the pudding to a serving bowl and garnish with crushed nuts.

  2. Allow it to cool, then refrigerate for 2 hours before serving.

Tips & Tricks

  1. Do not overcrowd the pan with meringue to ensure even poaching.
