Ingredients

4 Servings
(1 serving = 1 roll)

Crepe

  • 1piece
    Egg
  • 225g
    All purpose flour
  • 250mL
    Water
  • 1pinch
    Salt
  • 1/4tsp
    Turmeric powder

Filling

  • 4tbsp
    Sugar
  • 1 1/2cup
    Grated coconut
  • 1/4tsp
    Cardamom powder
  • 1tsp
    Ghee
  • 2tbsp
    Cashew nuts
  • 1tbsp
    Raisins

How to make Elanji Roll / Love Letter

Prepare the Batter

  1. Add all-purpose flour, egg, salt, and turmeric powder along with water to a blender.

  2. Blend until smooth. Set the batter aside.

Prepare the Filling

  1. Heat a pan over medium flame and add ghee.

  2. Once the ghee is hot, reduce the flame to low and add chopped cashew nuts.

  3. When the cashews turn light brown, add raisins and cook until golden brown.

  4. Add grated coconut, sugar, and cardamom powder. Mix well for 1 minute on low flame.

  5. Turn off the flame and set the filling aside.

Cook the Crepes

  1. Heat a dosa pan over medium flame and spread some ghee.

  2. Pour some batter with a ladle and spread it thinly like a dosa.

  3. Cook one side for 35-40 seconds, then flip and cook the other side for 30 seconds.

  4. Transfer the cooked crepe to a plate.

Assemble the Rolls

  1. Place 1 tbsp of filling on one side of the hot crepe.

  2. Roll the crepe once, then fold the ends inward and continue rolling.

  3. Repeat the process for all crepes.
