Easy Tomato Rice recipe

Ingredients

4 Servings
(1 serving = 1 cup)

Main Ingredients

  • 1cup
    Ponni rice
  • 2piece
    Tomato
  • 3clove
    Garlic
  • 1/2in
    Ginger
  • 1piece
    Green chilly
  • 1/2tsp
    Turmeric powder
  • 1tbsp
    Ghee
  • 2 1/2cup
    Coconut milk
  • 2tbsp
    Coriander leaves
  • Salt to taste

How to make Easy Tomato Rice

Preparation

  1. Soak the rice for 30 minutes and then strain it. Set aside.

Tomato Mixture

  1. Add tomato pieces, green chilly, garlic, and ginger to a mixer jar. Grind the mixture and then strain it.

Cooking

  1. Place a cooker on the stove and add coconut milk, salt, strained tomato mix, turmeric powder, and ghee. Let it boil.

  2. When it starts bubbling, add the rice. Close the lid and cook until the rice is well cooked.

  3. Turn off the flame. Once the pressure is completely gone, open the lid.

  4. Add chopped coriander leaves and mix well.

Tips & Tricks

  1. For extra flavor, you can add a pinch of cumin seeds while boiling the coconut milk.

  2. Serve with potato fry and pickle for a complete meal.
