Ingredients

8 Servings
(1 serving = one slice)
  • 2cups
    Grated carrot
  • 2cups
    All purpose flour
  • 1cup
    Granulated sugar
  • 2tsp
    Baking powder
  • 1/2tsp
    Baking soda
  • 1/4cup
    Raisins
  • 1tsp
    Vanilla essence
  • 4clove
    Clove
  • 1pinch
    Salt
  • 4piece
    Egg
  • 3/4cup
    Oil

For Caramel Syrup

  • 1cup
    Sugar
  • 1cup
    Water

How to make Easy Carrot Cake

Caramel Syrup

  1. Caramelize the sugar, then add water.

  2. Let it boil.

  4. Boil until 3/4th of the water is reduced.

  5. Turn off the flame and allow to cool completely. Set aside.

Cake Batter

  1. In a bowl, add flour, baking soda, baking powder, and salt.

  2. Sieve this mixture three times. Set aside.

  3. In a mixer jar, add the remaining sugar and grind into fine powder.

  4. Beat the eggs along with vanilla until fluffy.

  5. Add powdered sugar to the eggs and beat until well mixed.

  6. Add oil and beat for 3 minutes.

  7. Combine the caramelized carrot mix with the beaten egg mix.

  8. Mix well using a whisk.

  9. Add the flour mix and combine in a circular motion using a whisk or spatula.

Baking

  1. Grease a 10-inch cake tin with oil and place a parchment paper.

  2. Pour the cake mix into the tin and tap it gently.

  3. Bake at 180°C for 45 minutes and then at 160°C for 15 minutes.

  4. Remove from the oven and let it cool down completely.

  5. The easy and tasty carrot cake is ready to serve.

Tips & Tricks

  1. Ensure the caramel syrup is completely cooled before mixing with the eggs to prevent cooking the eggs.

  2. Use a whisk to gently fold the flour mixture into the wet ingredients to maintain the cake's fluffiness.
