How to make Brinjal Kosumalli / Brinjal Chutney
Cooking Instructions
Put a pressure cooker on the stove and add oil. When it becomes hot, add mustard seeds.
When the mustard seeds pop, add chopped onion.
Sauté the onion until it becomes transparent.
Then add green chilly, tomato pieces, potato pieces, brinjal pieces, turmeric powder, curry leaves, and salt.
Add 1 cup of water when it starts bubbling. Close the lid.
Cook for 3 whistles.
When the pressure is completely gone, open the lid.
Mash the mixture.
Then add asafoetida powder and let it boil for 1 minute.
Turn off the flame.
Finely add coriander leaves.
The tasty kosumalli is ready to serve.
