Fresh Cream Doughnuts recipe

Ingredients

8 Servings
(1 serving = 1 doughnut)

Doughnuts

  • 4cups
    cake flour
  • 4tbsp
    castor sugar
  • 4tbsp
    butter
  • 1cup
    castor sugar for tossing
  • 1tbsp
    milk powder (optional)
  • 1/2cup
    lukewarm water
  • 1/2cup
    lukewarm milk
  • 1piece
    egg
  • 5g
    yeast
  • 1tsp
    salt

Fresh Cream Filling

  • 250mL
    fresh cream
  • 1/4cup
    water
  • 1tsp
    gelatin powder
  • 1tbsp
    icing sugar

How to make Fresh Cream Doughnuts

Doughnuts

  1. Melt butter in a bowl and set aside.

  2. Beat egg in a bowl and set aside.

  3. In a mixing bowl, sift flour, add salt, yeast, castor sugar, and milk powder. Add the beaten egg.

  4. Pour in lukewarm water, milk, and melted butter.

  5. Mix until it forms a soft dough and knead for 10 minutes.

  6. Grease a bowl with oil and pat the excess oil over the dough to avoid a crust on the top.

  7. Cling wrap the dough and place it in the oven to rest for 1 to 3 hours.

  8. After the dough has rested, punch down the dough and knead for 1 minute.

  9. Cut into 8 pieces and shape doughnuts.

  10. Cover with a dishcloth and allow to rest for a further 30 minutes.

  11. Deep fry in medium-high oil until brown. When doughnuts are warm, roll in castor sugar.

Fresh Cream Filling

  1. In a bowl, pour gelatin and water and allow to crystallize for a minute, then microwave for 30 seconds until gelatin is dissolved.

  2. After 15 minutes, pour cream into a bowl, add icing sugar, and whisk until soft peaks appear.

  3. Pour in the gelatin to stabilize the cream, keeping it firmer for longer. Whisk until stiff peaks appear.

  4. Once the doughnuts have cooled, slit them in the middle but not all the way through.

  5. Fill the doughnuts with cream and decorate with cherries.

Tips & Tricks

  1. Ensure the oil is at the right temperature before frying to achieve a golden brown color.

  2. Resting the dough for longer results in fluffier doughnuts.
