A traditional South African sweet treat, Cape Malay Koeksisters are deep-fried dough pastries, flavored with spices and coated in syrup.
Ingredients
Dry Ingredients
- 2cupscake flour
- 1cupself-raising flour
- 3tbspsugar
- 1/4tspsalt
- 5ginstant yeast
- 1tspground ginger powder
- 1tspslightly crushed aniseed
- 1tspground cinnamon
Wet Ingredients
- 1piecesmall egg
- 1tspoil
- 1tbspmelted butter
- 1 1/2cupmilk and water mixed
How to make Cape Malay Koeksisters
Mix the dry ingredients together in a large bowl.
Mix the wet ingredients in a separate bowl.
Add the wet ingredients to the dry ingredients and mix well. The mixture will be extremely soft and sticky.
Cover and allow to rise in a warm place until triple in size.
Empty the dough onto a floured surface and bring it together. Avoid using much flour to prevent toughening when fried.
Use oiled hands to form a log with the dough. Cut into 16 to 20 pieces.
Shape the pieces into ovals and allow them to rise on a well-greased tray, covered lightly with cling film.
Once doubled in size, pick each oval gently.

Avoid using too much flour when shaping the dough to prevent the koeksisters from becoming tough when fried.
