Spicy Chicken and Black Bean Soup

Ingredients
- 1onion diced
- 1jalapeño diced
- 3clovegarlic
- 1tbsptomato paste
- 1cupfrozen corn
- 1candiced tomatoes with green chiles
- 1canblack beans
- 5cupschicken bone broth
- 315gcooked chicken thighs
- 1tspcumin
- 1tsphot sauce
- 1oztaco seasoning
- 1cupreduced-fat Mexican cheese
- 2ozcream cheese
How to make Spicy Chicken and Black Bean Soup
Chop the onion, jalapeño, and garlic.
In a large pot, sauté the onion, jalapeño, and garlic until they are soft.
Add the tomato paste and cook for another minute.
Stir in the frozen corn, diced tomatoes with green chiles, black beans, chicken broth, and bring to a simmer.
Add the cooked chicken thighs, cumin, hot sauce, and taco seasoning.
Simmer for 20 minutes to allow the flavors to meld.
Stir in the reduced-fat Mexican cheese and cream cheese until melted and well combined.
Tips & Tricks
For extra heat, add more jalapeño or hot sauce.
Serve with tortilla chips or warm bread for a complete meal.
Soften cream cheese before adding to soup.
