One Pot Easy Turkey Taco Rice

A simple and flavorful one-pot meal featuring ground turkey, rice, black beans, and enchilada sauce, topped with cheese and fresh cilantro.

- 1 3/4lbground turkey
- 2cupscooked rice
- 1cupblack beans
- 1cupenchilada sauce
- 1cupshredded cheese
- 1piecelarge bell pepper, diced
- 1piecemedium onion, diced
- 1/4cupcilantro, chopped
- 1tbsplime juice
- 2tbsptaco seasoning
How to make One Pot Easy Turkey Taco Rice
Cooking Instructions
In a large pot over medium heat, cook the ground turkey with the taco seasoning until browned.
Add the diced bell pepper and onion to the pot. Cook until the vegetables are softened.
Add the cooked rice, black beans, and enchilada sauce. Stir to combine.
Sprinkle the shredded cheese over the top and cover the pot. Allow the cheese to melt.
Serve with a lime quarter and more cilantro for garnish.
Tips & Tricks
To make it spicy add red pepper flakes or 1 tsp of hot sauce.
