How to make Chicken Karahi
Cooking Instructions
Heat oil or ghee in a karahi or deep pan over medium-high heat. Add chicken pieces and fry until lightly browned.
Remove the chicken and set it aside.
In the same pan, add chopped onions and sauté until golden brown.
Stir in minced garlic and grated ginger. Sauté for another minute until fragrant.
Add blended or chopped tomatoes, cumin, coriander, turmeric, salt, and black pepper. Cook until the oil separates from the tomatoes.
Reduce the heat to low. Gradually add the whisked yogurt, stirring continuously to prevent curdling. Let it cook until well combined.
Return the chicken to the pan, mix well, and add water. Cover and cook for about 20 mins, stirring occasionally.
If using green chilies, add them now. I had a hard time finding green chiles in michigan so I did not include them.
Uncover and let it cook until the gravy thickens. Add garam masala and lemon juice. Stir well.
