Vegetable Daal Penne Pasta with Ricotta Cheese

Ingredients
- 1tspolive oil
- 1tspgarlic, chopped
- 2tspred bell pepper, sliced
- 2tspyellow bell pepper, sliced
- 2tspgreen capsicum, sliced
- 2tsponion, sliced
- 3piecetomato, pureed
- 1/2tspblack pepper powder
- 1tspwhite vinegar
- 1 1/2cupPink Harvest penne pasta, boiled
- 1tspricotta cheese
- 3tspwater
How to make Vegetable Daal Penne Pasta with Ricotta Cheese
Heat olive oil in a deep pan and add chopped garlic.
Add onions and all bell peppers and capsicum. Cook until they are 60% done.
Remove the vegetables and set aside. Add tomato puree to the same pan.
Season with pink salt, cover with a lid, and let it cook for 2-3 minutes.
Add black pepper and vinegar. Stir in the boiled penne pasta and cooked vegetables.
Mix everything well. Add pizza mix seasoning and ricotta cheese.
Add a little water, cover, and cook for 1-2 minutes.
Sprinkle with additional seasoning and chili flakes before serving.
Tips & Tricks
Adjust the seasoning and chili flakes according to your taste preference.
For a creamier texture, add more ricotta cheese.
