A delicious and moist carrot bread with a hint of spices and the crunch of pecans.

Ingredients

  • 1 3/4cup
    flour
  • 1tsp
    baking soda
  • 1/2tsp
    baking powder
  • 1/2tsp
    salt
  • 1 1/2tsp
    ground cinnamon
  • 1/4tsp
    ground ginger
  • 1/4tsp
    ground nutmeg
  • 3piece
    eggs
  • 3/4cup
    vegetable oil
  • 1piece
    medium apple, peeled and grated
  • 2cup
    grated carrots
  • 1cup
    light brown sugar, packed
  • 1tsp
    vanilla extract
  • 3/4cup
    chopped pecans

How to make Scrumptious and Moist Nigerian Carrot Bread

  1. Preheat oven to 350 degrees. Grease a 9×5 inch loaf pan.

  2. Whisk together the flour, baking soda, baking powder, salt, ground cinnamon, ground ginger, and ground nutmeg in a medium bowl.

  3. In a large bowl, stir together the eggs, vegetable oil, grated apple, grated carrots, brown sugar, vanilla extract, and chopped pecans.

  4. Stir the flour mixture into the carrot mixture just until combined. Pour into prepared pan.

  5. Bake for 50-60 minutes or until a toothpick inserted in the center comes out clean. Do not overbake.

  6. Cool the bread in the pan on a wire rack for 5-7 minutes before carefully inverting it onto the wire rack and gently rolling it over. Cool for 2-3 hours before slicing.

  1. Ensure the apple is finely grated to blend well into the batter.

  2. Do not overmix the batter to keep the bread moist.
