Ingredients
- 250gbutter or baking margarine
- 1cupicing or caster sugar
- 1tspvanilla essence
- 2tbspoil
- 1cupdesiccated coconut
- 2 1/2cupcake flour
- 1tspbaking powder
- 2tbspcocoa powder
- 2piecelarge eggs
- 200gchocolate for decoration
How to make Romany Creams
Preheat oven to 180°C. Grease a baking tray with butter and dust with flour.
Sieve flour, baking powder, and cocoa powder. Set aside.
Cream butter and sugar together. Add vanilla essence, oil, eggs, and coconut, and mix until combined.
Add the dry ingredients and mix until a dough is formed.
Roll dough and scrape its surface with a fork to create a rough texture.
Cut with a cookie cutter and place on a baking tray.
Bake for 10-15 minutes or until done.
Once baked and cooled, sandwich biscuits together with melted chocolate.
