Nigerian Brownie Sandwich Cookies

Ingredients
- 1 1/2sticks unsalted butter
- 2cupssugar
- 4piecelarge eggs
- 1/2cupunsweetened cocoa powder
- 1tspvanilla extract
- 2 1/4cupsall-purpose flour
- 1tspsalt
- 1cupsemi-sweet chocolate chips
- 1cupchopped walnuts
How to make Nigerian Brownie Sandwich Cookies
Make the Brownie Dough
In a medium-sized mixing bowl, cream together the butter and sugar until light and fluffy.
Beat in the eggs one at a time, followed by the cocoa powder and vanilla extract.
In a separate bowl, whisk together the flour, salt, and chocolate chips.
Gradually add the dry ingredients to the wet ingredients and mix until a dough forms.
Chill the Dough
Wrap the dough in plastic wrap and refrigerate for at least 30 minutes or up to 2 hours.
Scoop and Bake the Brownie Cookies
Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
Scoop the dough into balls, about 1 tablespoon each. Leave about 2 inches of space between each cookie.
Bake for 10-12 minutes or until the edges are set and the centers are slightly soft. Let cool on the baking sheet for 5 minutes before transferring to a cooling rack.
Assemble the Sandwich Cookies
Once the cookies are completely cool, place a scoop of your favorite ice cream in between two brownie cookies.
