    all-purpose flour
  • 1cup
    mixed dried fruits (raisins, currants, chopped dates)
  • 1/2cup
    orange juice
  • 1/2cup
    granulated sugar
  • 1/2cup
    vegetable oil
  • 1/4cup
    chopped nuts (optional)
  • 1tsp
    baking powder
  • 1/2tsp
    baking soda
  • 1/2tsp
    ground cinnamon
  • 1/4tsp
    ground nutmeg
  • 1/4tsp
    salt
  • 1tsp
    vanilla extract

How to make Eggless Fruit Cake

  1. Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.

  2. In a large bowl, whisk together the dry ingredients: flour, baking powder, baking soda, cinnamon, nutmeg, and salt.

  3. In another bowl, combine the orange juice, sugar, vegetable oil, and vanilla extract. Mix well.

  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.

  5. Fold in the mixed dried fruits and chopped nuts (if using).

  6. Pour the batter into the prepared cake pan.

  7. Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.

  8. Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
