- 2cupsall-purpose flour
- 1cupmixed dried fruits (raisins, currants, chopped dates)
- 1/2cuporange juice
- 1/2cupgranulated sugar
- 1/2cupvegetable oil
- 1/4cupchopped nuts (optional)
- 1tspbaking powder
- 1/2tspbaking soda
- 1/2tspground cinnamon
- 1/4tspground nutmeg
- 1/4tspsalt
- 1tspvanilla extract
How to make Eggless Fruit Cake
Preheat your oven to 350°F (175°C). Grease and flour an 8-inch round cake pan.
In a large bowl, whisk together the dry ingredients: flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
In another bowl, combine the orange juice, sugar, vegetable oil, and vanilla extract. Mix well.
Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
Fold in the mixed dried fruits and chopped nuts (if using).
Pour the batter into the prepared cake pan.
Bake for 45-55 minutes, or until a toothpick inserted into the center comes out clean.
Allow the cake to cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
