- 1tspbaking powder
- 2tbspsugar
- 2tbspmargarine
- 9tbspwater
- 1piecebeaten egg
- 5pieceboiled eggs
- 1/4tspsalt
- 1/2tspnutmeg (optional)
How to make Nigerian Egg Roll
Mix the flour (sifted), baking powder, salt, and sugar in a large bowl. Add margarine and use your fingers to blend it into the flour until crumbly. Stir in the beaten egg. The dough should look dry at this point. Begin to introduce the water a little at a time and work the dough until it is soft and sticky but still workable.
Cover the dough and let it rest for 20 minutes. Afterwards, work the dough again for 2 minutes and divide it into five balls. Flatten out each ball of dough on the palm of your hand, drop a boiled egg in the middle of the flattened dough, and tightly wrap the dough around each egg.
Fry on medium heat until golden brown, about 6 to 8 minutes, turning every few minutes. Enjoy your egg roll hot or warm.
