Ingredients
- 1cancream style corn
- 1canwhole kernel corn, drained, save ½ of the liquid
- 1cupsour cream
- 8ozCheddar Cheese, freshly shredded
- 1pkg cornbread mix, dry
- 2piecelarge eggs
How to make Cheesy, Creamy Cornbread Casserole
Preheat your oven to 375°F.
Lightly spray a 9x13 baking pan.
In a mixing bowl, combine the cream style corn, the whole kernel corn, the saved corn liquid, the eggs, dry cornbread mix, and the sour cream.
Stir well to combine.
Pour the batter into the prepared pan and sprinkle it with cheese.
Place on the middle rack in the oven and bake for 30 minutes, until it is a light golden brown.
Tips & Tricks
For extra flavor, add some chopped jalapeños or green chilies to the batter.
Let the casserole cool for a few minutes before cutting to make it easier to serve.
