Plum tomatoes beef stew (Nigerian style)

It is a very simple recipe, that is easy and delicious and its mainly eaten by most Nigerians

Ingredients
- 1/8cupof groundnut oil
- 1/8cupof palm oil
- 2medium onions bulb (chopped)
- 1/2tspof garlic
- 6medium sized fresh tomatoes (chopped)
- 3table spoons of tomatoes paste
- 4scotch bonnet peppers (chopped)
- 1 1/2cupsof meat stock
- 1/8tspof bouilion powder
- 1/2tspof curry
- 1/2tspof thyme
- 7pieceof fried beef or pre-cooked beef
- 1/8tspsalt
How to make Plum tomatoes beef stew (Nigerian style)
In a clean pot add in your both oil
Allow to heat up for about 7 minutes on medium low heat, before adding in your onions and garlic. stir till it is translucent.
Add in your tomatoes paste, stir and allow to fry for about 7 minutes to get ruined of the sour taste.
Add in your chopped fresh tomatoes and pepper and allow to cook till the liquid is almost dried up.
Then add in your meat stock, meat and allowed to cook for an additional 10 minutes.
Go ahead to add in your salt, thyme, curry, bouillon powder. Mix to combine.
Taste to adjust the seasoning and if the consistency is too thick you can add 1/2 cup of meat stock.
cover and allow to cook. when you notice the oil floating at the surface your stew is properly cooked.
Take it off the heat and pair it with rice, yam or spaghetti.
