This a simple and flavourful Nigerian fried rice.

Ingredients
- 2cupsof raw and washed rice
- 3 1/2cupsof chicken stock
- 2tbspof curry
- 1tbspof thyme
- 1/2tbspof fried rice spice
- 1/4black pepper
- 1onion bulb (chopped)
- 1egg (whisked)
- 1/2tspof soysauce
- 6carrots (chopped)
- 8green beans (chopped)
- 1red bell pepper (blended wihout seed)
- 4table spoon of coconut oil
- 1canmedium sweet corn
- 1/4tspof tumeric powder
How to make Simple FRIED RICE
Heat up 2 table spoons of oil in a large skillet over medium heat, Add in the rice and saute for 3-5 minutes until toasted
Add in your chicken stock, thyme, fried rice spice, curry, bell pepper, tumeric and salt to taste. Mix to combine.
Allow to cook till the rice has softened a bit and the water is almost dried up. then spread it on a tray and allow to cool to remove moisture
In another pot, heat up the remaining table spoon of oil. Add in your onions and let it simmer for some time, before adding in your veggies. go ahead to add in a pinch of salt and add a dash of soy sauce before taken it out
In the same pan, Add in 1 table spoon of oil then add your eggs and let it sit for few seconds until they start to set. scramble until cook before taking it out.
Divide the rice into sections as well with the veggies seperately
Add in slight coconut oil in the pan and a portion of veggies together with the rice and pan fry, using a non-stick pan during the process
Stir on a medium low heat, till it is slightly crispy. Then add in your scrambled eggs. take it out , then repeat the process for the rest of the badges.
