Fried Coconut rice recipe

Ingredients

    medium sized coconuts (extract the milk from the coconut)

    of water (adjust based on the rice type)

How to make Fried Coconut rice

  1. In a clean blender, add in your washed tomatoes, scotched bonnet peppers, 1 red bell peppers,1 green bell peppers and 1 large onions with half cup of water to aid the blending process. blend till it's roughly blended.

  2. In a clean bowl, properly wash your rice with warm water, wash thoroughly to remove the starchy texture, till the water is clean and then strain it out and set aside.

  3. In another pot, add in your olive oil and allow to heat up for about 7 minutes, before adding in your roughly blended pepper mix. stir and allow to fry till the water is almost dried up.

  4. Add in your meat stock, curry, thyme, garlic, ginger, nutmeg, seasoning powder, salt,soy sauce, coconut milk. Before adding in your washed rice stir gently. Since it's 5 cups of rice i will be adding 31/2 cups of water depending on the type of rice you are using. for me i am using Nigerian grain rice.

  5. Taste to adjust the seasoning, cover and allow to cook and make sure the rice shouldn't be too soft. within those time it's cooking stir it using a wooden spoon so that it won't burn and it will cook at the same them temperature. cover and allow to boil till the water is dried.

  6. In a clean non-stick pan, add a scoop of butter allow to heat up slightly before adding a portion of rice and pan fry till you will notice the rice is no longer clumsy and there is no moisture content then it is a sign your rice is properly fried. pan fry for the rest of the other batches.

  7. To make the side dish veggie sauce, add a drizzle of of olive oil or a scoop of butter in a non-stick pan or a clean pot. allow to heat up slightly before adding in your diced onions, stir till it is translucent before adding your sweet corn, diced red and green bell peppers, 2scoops of meat stock and 1/2 table spoon of sugar then allow to boil till its almost dried up.

  8. Serve with peppered meat or grilled chicken with your veggie sauce.
