It is a delicious stew that is simple and straight forward.

Ingredients

    of fried chicken or cooked chicken
  • 12
    fresh tomatoes
  • 5
    bell peppers
  • 4
    scotched bonnet pepper
  • 4
    large onions
  • 2 1/2cups
    of groundnut oil
  • 1/2tbsp
    of salt
  • 1/2tbsp
    of bouillon powder
  • 2tbsp
    of crayfish powder(optional)
  • 2
    bayleaves
  • 6
    table spoons of tomatoes paste
  • 1tsp
    of nutmeg powder
  • 1/2tbsp
    of garlic powder
  • 1/2tbsp
    of ginger powder
  • 2 1/2cups
    of chicken stock

How to make Chicken party stew

  1. In a clean blender, Add in your washed fresh tomatoes, bell peppers, scotched bonnet peppers, 3 large onions and three cups of water to aid the blending process. Blend till its roughly blended.

  2. In a clean pot, pour in your roughly blended pepper mix and allow to boil till the water is almost dried up.

  3. In another clean pot, add in your groundnut oil and allow to heat up for about 7 minutes.

  4. Add 1/2 table spoon of salt and 1 large sliced onions, stir to combine.

  5. Allow the onions to be translucent before adding in your tomatoes paste stir and fry for about 7 minutes.

  6. Pour in your per-boiled pepper mix, stir to combine and allowed to boil for 15 minutes (give it a stir every 5 minutes till the 15 minutes is completed).

  7. Add in your cooked chicken and chicken stock and allow to boil for 8 minutes. For the cooked chicken i braised it a little bit.

  8. Add in your thyme, bay leaves, curry, nutmeg, crayfish, ginger, garlic, bouillon powder. stir to combine

  9. Taste to adjust the seasoning.

  10. Cover and allow to cook, till you notice the oil floating at the top. Take it off and serve with white rice.

Tips & Tricks

  1. Make sure your stew is properly fried for it to last longer

  2. Boil your pepper mix to get ruined of the soured taste
