- 9pieceof fried chicken or cooked chicken
- 12fresh tomatoes
- 5bell peppers
- 4scotched bonnet pepper
- 4large onions
- 2 1/2cupsof groundnut oil
- 1/2tbspof salt
- 1/2tbspof bouillon powder
- 2tbspof crayfish powder(optional)
- 2bayleaves
- 6table spoons of tomatoes paste
- 1tspof nutmeg powder
- 1/2tbspof garlic powder
- 1/2tbspof ginger powder
- 2 1/2cupsof chicken stock
- 1/2tbspof Curry
- 1/2tbspof thyme
How to make Chicken party stew
In a clean blender, Add in your washed fresh tomatoes, bell peppers, scotched bonnet peppers, 3 large onions and three cups of water to aid the blending process. Blend till its roughly blended.
In a clean pot, pour in your roughly blended pepper mix and allow to boil till the water is almost dried up.
In another clean pot, add in your groundnut oil and allow to heat up for about 7 minutes.
Add 1/2 table spoon of salt and 1 large sliced onions, stir to combine.
Allow the onions to be translucent before adding in your tomatoes paste stir and fry for about 7 minutes.
Pour in your per-boiled pepper mix, stir to combine and allowed to boil for 15 minutes (give it a stir every 5 minutes till the 15 minutes is completed).
Add in your cooked chicken and chicken stock and allow to boil for 8 minutes. For the cooked chicken i braised it a little bit.
Add in your thyme, bay leaves, curry, nutmeg, crayfish, ginger, garlic, bouillon powder. stir to combine
Taste to adjust the seasoning.
Cover and allow to cook, till you notice the oil floating at the top. Take it off and serve with white rice.
