A simple and healthy vegetable soup packed with a variety of fresh vegetables and seasoned with herbs.

Ingredients

6 Servings
(1 serving = 1 bowl)
  • 2tbsp
    olive oil
  • 1piece
    onion, chopped
  • 3clove
    garlic, minced
  • 2piece
    carrots, chopped
  • 2piece
    celery stalks, chopped
  • 1piece
    zucchini, chopped
  • 1piece
    potato, peeled and diced
  • 1piece
    bell pepper, chopped
  • 1cup
    green beans, trimmed and chopped
  • 1can
    diced tomatoes (14 oz)
  • 4cups
    vegetable broth or water
  • 1tsp
    dried thyme
  • 1tsp
    dried basil
  • 1/2tsp
    black pepper
  • Salt to taste
  • 1cup
    spinach or kale (optional)
  • 1/2cup
    frozen peas or corn (optional)
  • Fresh parsley for garnish

How to make Healthy Vegetable Soup

Sauté Vegetables

  1. Heat the olive oil in a large pot over medium heat.

  2. Add the chopped onion, garlic, carrots, and celery. Sauté for 4-5 minutes until the onions become soft and translucent.

Add Other Vegetables

  1. Add the zucchini, potato, bell pepper, and green beans. Stir and cook for another 3-4 minutes.

Add Broth and Seasonings

  1. Pour in the vegetable broth (or water) and add the diced tomatoes.

  2. Stir in the thyme, basil, pepper, and salt to taste.

Simmer

  1. Bring the soup to a boil, then reduce the heat to low and cover the pot.

  2. Let the soup simmer for 20-25 minutes, until the vegetables are tender.

Optional Add-ins

  1. If using spinach, kale, peas, or corn, add them to the soup in the last 5 minutes of cooking.

Taste and Adjust

  1. Taste the soup and adjust the seasoning if necessary (add more salt, pepper, or herbs).

Serve

  1. Ladle the soup into bowls and garnish with fresh parsley.
